Noto beef is a rare Japanese black breed that is raised in Noto’s simple climate with beautiful nature and sea breeze, and is distributed almost exclusively within Ishikawa Prefecture.

The meat is characterized by its fine texture and refined fat. The tenderness and aroma of beef vary depending on the content of oleic acid contained in the fat. It is said that the higher this value, the more melt-in-your-mouth texture you can enjoy. Noto beef won the “Special Award” at the 9th National Wagyu Beef Competency Exhibition, also known as the Olympics of Wagyu Beef, for having the highest content of oleic acid and excellent fat quality.
